Saltbush

Our Saltbush is dried and comes in a tea grade flake (varying size from 2mm - 4mm) ready to season all your savoury goodies. Like all of the things. 

If you tell any farmers over the age of 60 that saltbush is now a bit of a delicacy, they would laugh in your face. A bit like the lamb shank, which was once fed to the farm dogs but is now one of the priciest cuts in the butcher’s shop, saltbush was only eaten by the sheep. Alas, it should be eaten by us all – it is wonderful.

Note: There are many different species of saltbush. We tend to use old man saltbush the most.

How to Use

A huge number of seeds come from the flowering after spring and autumn and they are like little salty popcorn kernels, but were also ground and mixed with water to make dough cooked in coals.

We have loads on our farm, as I walk around I just pick it and nibble on it. A bit like the sheep. It's dried (not dehydrated) in the shade to keep the colour and nutrients, and comes in fine tea-grade flakes.

Note: When using fresh leaves you can dry them and blitz them to use as powder.

To maintain Warndu taste we keep smaller quantities on hand of our Australian Natives, it takes us a little while to dry, roast or grind them to make. We aim to send all orders within ten days of receiving them.

◎ We send by tracked standard Australia Post and offer Express Post.  With Express Post please be aware that we still require 3-10 days for packing from the time of order. This allows us to blend products and keep up with the volume of orders. Express Post speeds up the AusPost delivery time only. 

◎ We offer free delivery over $100 when you enter the code FREESHIP at checkout.

◎ Delivery cost is by weight i.e.

◦ $12 for a book, spices or teas 
◦ Up to $25 for a larger order

◎ Due to our hand blending and keeping products as fresh as possible, items may take 7-10 days to prepare, and then send from the Clare Valley. There has been delays due to border closures. We generally send items on Tuesdays.
